Progress in immobilized glucose isomerase

Abstract

High fructose corn syrup, a natural sweetener, has been widely used in foods and beverages. Glucose isomerase is one of the key enzymes in the production of high fructose corn syrup. It is an important industrial enzyme in commerce today. Its immobilization technology is very mature and considered to be the paradigm for enzyme immobilization This paper described the glucose isomerase and its immobilization, and its application in the production of high fructose corn syrup was also introduced.
