At the solvent-free and external agents-free condition,the mixture of starch andε-Poly-
L-lysine(NSP)was mechanically treated by the technology of mechanical activation method with
a ball mill,and the product was named MASP.The effect of ball milling treatment on the
morphology,crystal structure and molecular groups of starch was explored by scanning electron
microscopy (SEM),X-Ray diffraction (XRD),differential scanning calorimetry (DSC)and
fourier transform infrared spectroscopy(FTIR).The films of MASP were covered on grass carp.
The preserving quality of grass carp during cold storage(4±1)℃ was assessed.The results
indicated that during the preparation process,the particle morphology and crystallization of
starch were destroyed,but the chemical structure of starch andε-Poly-L-lysine was almost not
changed.The contents of volatile base nitrogen(TVB-N)and malondialdehyde(TBA)of the
MASP coating treatment group were significantly lower than those of the NSP coating treatment
group,slowed down the rate of change,meanwhile the total number of colonies didnt exceed 5
(lg CFU/g)within 10days.These results indicated that the preparation of antibacterial coating
materials by mechanical activation method has potential application value in preservation.
