The stereoselective degradation of myclobutanil and hexaconazole in the submerged fermentation of Monascus and Monascus wine brewing process were analyzed by HPLC-MS/MS,and the effects of enantiomers on enzyme(glucoamylase,cellulose)and secondary metabolites (Monascus pigment,citrinin)of Monascus were investigated.The results showed that the degradation rate of two enantiomers of myclobutanil and hexaconazole was similar,and no stereoselective degradation was found.The racemates and enantiomers of myclobutanil and hexaconazole showed certainly differences in the enzyme production and metabolism of Monascus. At a concentration of 5 and 0.5 mg/L of racemates and enantiomers of hexaconazole, respectively,the enzyme production and metabolites changed significantly,with(+)-hexoxazole higher than (-)-
hexaconazole.However,at 0.05 mg/L of racemates and enantiomers of
hexaconazole,no significant changes occurred.In addition,there was also no significant difference between racemates and enantiomers at different concentrations of myclobutanil.
