The metabolic transformation of isoflavones from chickpeas in simulated
gastrointestinal tract was investigated.The UPLC-QTOF-MS was applied to monitor the in vitro metabolic process of chickpeas extract and its isoflavone compounds incubated in simulated gastric juice,intestinal juice and human intestinal flora,respectively.The extract of chickpeas unchanged during the incubation with simulated gastric juice and intestinal juice.2metabolites were identified from ononin,4metabolites from formononetin 7-O-β-D-glucoside 6″-O-malonate, and 4from biochanin A 7-O-β-D-glucoside 6″-O-malonate in human intestinal flora,respectively. However,formononetin and biochanin A didnt change significantly in human intestinal flora.
The main metabolic process of isoflavone included hydrolysis,deglycosylation,dehydroxylation and hydroxylation.The results showed that isoflavones in chickpeas were stable in simulated gastric juice and intestinal juice,and intestinal flora played an important role in the metabolism of isoflavones from chickpeas.
