摘要

在低盐固态发酵法生产过程中,采用倒曲机将固态曲料从制曲箱中转运到制醅机中,拌盐水制成醅料进入发酵池,解决了采用人工铲运曲料的传统方法。研究结果表明,此倒曲机操作简单、动作可靠性高、不需人工且投资少,解决了低盐固态发酵法生产过程中物料转运的难题。

Abstract

In the process of low salt solid-state fermentation of soy sauce, the unloading koji machine was used to transport the solid koji to the fermentation machine. The solid fermentation soy sauce with salt water was put into fermentation tanks to solve the problems from the traditional method of artificial transportation. The results showed that the unloading koji machine had the advantages of simple automatic operation, high action reliability, and low investment. The material
transportation problems in the production process of low salt solid-state fermentation were solved.
